Easy Eggless Lemon Cake

Lemon cake is the very first home made cake  which I relished.My elder sister loves cooking and she used to try new recipes.She learnd this cake recipe in her school and then tried in our very basic round oven.I still can't forget how light and fluffy cake was that!
As we are pure vegetarian and egg was not allowed in our home so the lemon cake was real treat for us. I still follow the same recipe strictly and result is always YUM😋.
As lemon is the main ingredient here so two things have to remember while using the lemon.
First thing slightly green lemon is used and secondly while grating the lemon care has to be taken that only upper layer is grated.
If you have fresh cream then it's the best thing otherwise you can also use white butter or refund oil.
You can use yellow organic food colour for visual effects but I avoid adding any type of colour at all.
                  Recipe
Ingredients:
Maida  -1.5 cup
Milk-3/4 cup
Sugar-3/4 cup
Butter-3/4 cup
**You can use 1 cup fresh cream or 1/4 cup refined oil instead of butter.
Baking powder-1 tea spoon (levelled*)
Baking Soda-1/2 tea spoon
Green lemon zest (grated)-1 lemon
Lemon juice-of one lemon(2-teaspoon)
Vanilla essence (optional..as lemon has very strong smell itself 
Method
1. Mix butter and sugar thoroughly.Add  grated lemon peel.Keep aside.
2.Sift refined flour+baking powder+baking soda two three times
3.Now add refind flour through cut and fold method in butter sugar mixture.Also add milk to keep the consistency right.Do not over mix. 
4 Pour this batter into greased tin and bake in oven for 35-40 min at 150°C
Or in microwave for 4-5 minutes
Or in cooker on low flame for 45-50 minutes.
Enjoy with or without icing!!
